Our partner Marlene decided to try a new style of baking using an underground oven. This is what she came up with and it was awesome!

Depending on how many people you are feeding, this will work for any size dutch oven. We are feeding 12 people here using a 16 inch dutch oven.

Dig a hole in the ground approximately 24 inches deep and 24 inches wide, line bottom and sides with flat rocks. Start a good fire, pile on the wood and burn for at least one hour or two.   Clean out the ashes & hot coals ,set aside . In the Dutch oven put your roast, pork, beef, lamb, elk, venison,?  Add what ever seasoning you like, you can also add potatoes, onions, garlic, carrots, etc.  Put it in the pit you just cleaned the ashes out of, have some coals on the bottom,  put hot coals around dutch oven at least 2 to 3 inches thick, and on top. Put tin foil or something comparable  over top, cover with about 6 inches of soil, let cook for 7 hours,  Voila an awesome meal!!!!
